Santoku Knife 5” Kyoto Olive Aka Tori with Engraving
This is our second surprise from the Kyoto Olive knife line – a small Santoku knife with a blade length of 12.7 cm. The first is the small chef’s knife. We especially recommend both models to women, as they typically have smaller hands and these sizes are more comfortable to handle. Santoku features a distinctive blade shape where the tip slopes down quickly and the cutting edge is almost straight. This type of knife is used with short downward motions, while chopping is done with an up-and-down blade movement. Some say this knife is “faster” than a chef’s knife, which is used with a rocking motion back and forth. But we believe it’s simply a matter of practice. The knife sits comfortably in the hand, the handle is 10.5 cm long and made from polished olive wood, finished with a steel butt cap to make it more resistant to damage, and equipped with a front bolster ring that improves balance. The Damascus layer pattern is clearly visible, making this knife not only a practical kitchen tool but also a beautiful decorative piece if given as a gift.

Natural Handle and Finish
This line combines two trends and should appeal to anyone who does not particularly enjoy the classic Japanese knife aesthetic. First of all, both visually and physically, the knives are lightweight. Light olive wood paired with polished steel creates a refined appearance. The pattern of the 67-layer steel is visible yet subtle. The blade core is made of 9CR18Mov steel with a hardness of 60 HRC + 2° (minimum 60 HRC, up to 62 HRC). The handle is crafted from olive wood – a beautiful natural material often used in kitchens for cutting boards, utensils, cutlery, and spice grinders. We reinforced the handle with a steel end cap to protect it from mechanical damage during everyday kitchen use.
Due to the unique structure of natural wood, the shade of the handle may vary slightly, giving each knife its own unique character.

Care Instructions
The Aka Tori KYOTO OLIVE knife line is easy to maintain and sharpen. It should definitely not be washed in a dishwasher. Do not leave it in the sink with other kitchen utensils or dishes. (But if you leave it there once or twice, nobody will die.) After use, wash it under running water and dry both the blade and handle with a cloth. From time to time, wipe the handle with olive oil and remove any excess.
The blade angle is as low as 13-14° per side, and it is best to maintain its sharp edge by sharpening it manually on whetstones, choosing the grit depending on the level of wear. For everyday sharpness maintenance (or rather every few days), you can use a honing rod or ceramic rods to realign the cutting edge. Sharpening is easier because the smooth blade surface clearly shows the sharpening edge, allowing for quick correction in case of mistakes.
