Chef’s Knife 8” 20cm Aka Tori Tokyo Hammer
It is said to be the knife everyone should start their culinary journey with. The 20 cm blade allows you to handle larger pieces of meat and vegetables and easily transfer chopped ingredients. The sharp tip helps with trimming meat or removing vegetable cores. A good kitchen should have at least one large knife, and this Aka Tori model fits perfectly. The hexagonal handle sits comfortably in the hand and provides a secure grip even when wet.

Natural handle and finish
The blade is made of 67-layer Damascus steel, with a 10Cr15MoV core hardened to 60HRC + 2° (minimum 60 HRC, up to 62 HRC). TOKYO HAMMER knives feature a beautiful handle made of Cuibourtia wood combined with ebony. Cuibourtia, also known as Bubinga, is highly durable, has a reddish color, beautiful grain, and is resistant to fungi and mold.
Due to the natural structure of the wood, the handle color may slightly vary, giving each piece a unique character.

Care instructions
Do not wash in a dishwasher. Do not leave in the sink with other utensils. After use, wash under running water and dry the blade and handle thoroughly. Occasionally treat the handle with olive oil and wipe off excess.
The edge angle is 15° per side. Maintain sharpness using whetstones depending on wear. For everyday maintenance, use a honing rod or ceramic rod.

Traditional tsuchi-me technique
TOKYO HAMMER knives feature characteristic hammered marks (Japanese tsuchi-me 槌目). In this version, the entire blade is polished. This finish refers to traditional forging techniques found not only in Japan but also in India, China, Central Asia, Turkey, and Arab countries. Hammering was historically used to save time and improve durability. Today it is mainly aesthetic and helps prevent food from sticking to the blade.
