Santoku knife 7” 18cm Aka Tori with engraving
In terms of length (approx. 18 cm), this is one of those essential kitchen knives. Some prefer a chef’s knife, others a Santoku. The Santoku is a universal knife for all kitchen tasks. Its name refers to the characteristic blade shape with a flat cutting edge and a steeply dropping spine, which encourages a different cutting motion (up and down) that can feel faster. All Aka Tori knives are crafted with high attention to quality – you can choose whichever suits you best. “Santoku” means “three virtues” – vegetables, meat and fish, or three techniques: slicing, chopping, and cutting. In practice, unless you’re preparing a quarter-ton tuna, this knife will handle almost everything in the kitchen.

Natural handle and finish
The blade is made of 67-layer Damascus steel, with a core of 10Cr15Mov steel rated at 60HRC + 2° (minimum 60 HRC, up to 62 HRC). TOKYO HAMMER knives feature a handle made of Cuibourtia wood (also known as Bubinga) combined with ebony. This wood is very hard, has a beautiful reddish tone and grain, and is resistant to fungi and mold.
Due to the natural structure of the wood, the handle color may vary slightly, making each piece unique.

Care instructions
Not dishwasher safe. Do not leave in a sink with other utensils. After use, wash under running water and dry the blade and handle thoroughly. Occasionally treat the handle with a small amount of olive oil.
The blade angle is 15° per side. For maintenance, use whetstones and occasionally a honing rod or ceramic rod.

Traditional tsuchime technique
The TOKYO HAMMER line features characteristic hammered patterns (Japanese: tsuchime). This technique has historical roots across many cultures. Today it is mainly aesthetic and helps prevent food from sticking to the blade.
