7” (18 cm) Santoku Knife Aka Tori with engraving
In terms of size (approx. 18 cm), this is one of those essential kitchen knives. Some prefer a chef’s knife, others a Santoku. The Santoku is a versatile knife for all kitchen tasks. Its name refers to its characteristic blade shape with a flat cutting edge and a more sharply angled spine. This design encourages a different cutting motion (up-and-down), which can feel faster. However, as with all Aka Tori knives, it is crafted with high-quality attention to blade and handle, so you can choose whichever feels most comfortable. “Santoku” translates to “three virtues” – for vegetables, meat, and fish, or three techniques: slicing, chopping, and dicing. In practice, it performs excellently in almost any kitchen task.

Natural handle and finish
In this line, part of the blade steel is left unpolished and finished in black. We combined this with a beautiful ebony handle set in buffalo horn. All handle materials are natural and not synthetic composites. This finish makes the knife comfortable to hold, and the hexagonal handle fits well in the hand.
Due to the unique structure of natural wood, the shade of the handle may vary slightly, giving each piece a unique character.

Care instructions
Do not wash in a dishwasher. Do not leave in the sink with other utensils. After use, wash under running water and dry the blade and handle thoroughly. Occasionally treat the handle with a small amount of olive oil and wipe off excess.
The blade angle is 15° per side. Maintain sharpness by hand sharpening on water stones. For everyday maintenance, a honing steel or ceramic rod can be used.

Traditional tsuchi-me technique
This technique is not exclusive to Japanese knives. It refers to hammer marks found in handmade vessels produced in India, China, Central Asia, Turkey, and Arab countries. In the past, smooth finishing was too time-consuming for simple tools like knives, so only part of the blade was polished. Hammering also increased hardness and durability. Today it is mainly aesthetic, but it also helps prevent food from sticking to the blade.
