7” Santoku Knife 18 cm Kyoto Olive Aka Tori with engraving
Is a chef’s knife better or a Santoku? There is no clear answer. Since we don’t pretend it’s magic, choose the knife you like and that fits your size as your main kitchen knife. Keep in mind that with a Santoku you cut and chop using a slightly different motion – more up and down. Santoku knives have indentations (dimples) more typical of European than Japanese knives, helping prevent thin slices from sticking. The smooth blade finish enables precise slicing of vegetables and fish, making it a pleasure to use.

Natural handle and finish
This line combines two trends and should appeal to those who do not prefer traditional Japanese knife aesthetics. They are visually and physically lightweight. Light olive wood combined with polished steel. The pattern of 67-layer Damascus steel is visible but subtle. The core is 9CR18MoV steel with hardness 60 HRC + 2°. The handle is made of olive wood, reinforced with stainless steel fittings for durability and balance.
Due to the natural structure of wood, each handle may slightly differ in shade, making every piece unique.

Care instructions
The Aka Tori Kyoto Olive knives are easy to maintain and sharpen. Do not wash in a dishwasher. Do not leave in the sink with other utensils. After use, wash under running water and dry the blade and handle. Occasionally treat the handle with olive oil.
The edge angle is 13–14° per side and should be maintained using whetstones. For daily touch-ups, a honing rod or ceramic rod can be used.
