Nakiri Knife 7” 18cm Aka Tori with engraving
There is no equivalent of this knife in European kitchens. It can be compared to a small cleaver, but it is much lighter and more convenient. Originally used for chopping vegetables and herbs. However, you can also use it for eggs, cold cuts or soft cheese without switching knives. The 18 cm blade is almost the size of a chef’s knife and exactly the same as a standard Santoku. The cutting technique is also the same – mostly up and down motions. The wide blade makes it easy to transfer chopped ingredients.

Natural handle and finish
The blade is made of 67-layer Damascus steel, with a core of 10Cr15Mov steel with hardness 60HRC + 2° (minimum 60 HRC, up to 62 HRC). TOKYO HAMMER knives feature a beautiful handle made of Cuibourtia wood combined with ebony. Cuibourtia is also known as Bubinga. This wood is very hard, has a beautiful reddish color and grain, and is resistant to fungi and mold.
The shade of the handle may slightly vary due to the natural wood structure, giving each piece a unique character.

Care instructions
Do not wash in a dishwasher. Do not leave in the sink with other utensils. After use, wash under running water and dry the blade and handle with a cloth. Occasionally rub the handle with olive oil and wipe off excess.
The blade angle is 15° per side. Maintain sharpness by hand sharpening on whetstones depending on wear. For regular maintenance, use a honing rod or ceramic rods every few days.

Traditional tsuchi-me technique
Knives from the TOKYO HAMMER line feature characteristic hammer marks (Japanese tsuchi-me 槌目). In this version, the entire blade is polished. The finish references traditional forging techniques. This technique is not exclusive to Japanese knives – similar hammer marks can be found in India, China, Central Asia, Turkey, and Arab countries. Historically, smooth finishing was too time-consuming for simple tools, so only parts of the blade were polished. Hammering also improved durability and hardness. Today it is mainly decorative and helps prevent food from sticking.
