Paring Knife 3.5" Vegetable and Fruit Knife with Engraving
The narrow blade, not as wide as in European knives of this size, allows you to slice deli meats, dice fat for scrambled eggs, crack eggs without risk of injury, cut oranges (not just peel them), trim garlic, or even harvest chives in the garden. The knife is easy to clean and sharpen thanks to its thin spine. A versatile kitchen helper in this form.

Natural Handle and Finish
The blade is made of 67-layer Damascus steel with a 10Cr15MoV core hardened to 60–62 HRC. The TOKYO HAMMER line features a handle made of Cuibourtia (Bubinga) wood combined with ebony. Bubinga is known for its hardness, beautiful reddish color, grain pattern, and resistance to mold and fungi.
Due to the natural structure of the wood, the handle color may vary slightly, giving each piece a unique character.

Care Instructions
Do not wash in a dishwasher. Do not leave in the sink with other utensils. After use, wash under running water and dry the blade and handle thoroughly. Occasionally treat the handle with a small amount of olive oil and wipe off excess.
The blade angle is 15° per side. Maintain sharpness by hand sharpening on whetstones. For regular maintenance, use a honing rod or ceramic rod.

Traditional Tsuchime Technique
TOKYO HAMMER knives feature characteristic hammered marks (Japanese tsuchime 槌目). This finish references traditional forging techniques. The technique is not exclusive to Japan; similar hammer marks can be found in handcrafted vessels from India, China, Central Asia, Turkey, and Arab countries. Historically, polishing was expensive, so only parts of the blade were finished smoothly. Hammering also improved hardness and durability. Today it is mainly aesthetic and helps prevent food from sticking to the blade.
